Ingredients: 200g of spaghetti, 25g cheek of the pork (as alternative you can use pancetta), 2 eggs, 50g of grated parmesan cheese (you can mix with pecorino cheese), extra virgin olive oil, ground black pepper and salt to taste.
Preparation:
01.Cook the pasta into the boiling salted water.
02.Beat the eggs in a large bowl with the cheese and pepper.
03.Put a splash of oil in a pan and fry the cheek of the pork into small cubes until crisp.
04.Drain the pasta and put it directly into the pan with the creek. Add the eggs and mix everything very well.
05.Serve the carbonara with parmesan cheese and pepper on top.
