The Ingredients: 10-12 fresh scallops (do not use frozen ones), extra virgin olive oil, salt to taste and ½ lime juice.
The Prep: Wash the scallops thoroughly for 2-3 minutes under cold running water. Dry the scallops with a paper towel and season with a pinch of salt and a drizzle of olive oil. Prepare a large frying pan and turn on the heat. When the pan is really hot add some extra virgin olive oil and start cooking your scallops. Put the wider part (top end of your scallops) down first and let it cook for 2 minutes. The scallop will become golden and caramelized. Turn your scallops around and let them cook for another minute. Take your scallops from the pan and season with some sea salt and a drizzle of lime juice. You can serve your scallops with some sweet potato mash or a watercress salad.
