The Ingredients: 110g rustic bread (removing the crust), 700g ripe tomatoes, 50g extra virgin olive oil, half a clove of garlic and 5g salt. Accompaniment: Hardboiled egg cut in small pieces, small pieces of Iberian ham and a stream of extra virgin olive oil.
The Prep: Remove the crust from the bread and cut it in pieces. In a food processor or blender grind the tomatoes until totally liquid. Remove and pass the mix through a colander to remove the remains of the skin and the seeds. In a food processor or blender grind the bread, tomatoes, garlic, oil and salt a until you get a very thin red mixture. If necessary, you can add some water. Cool in the refrigerator before serving. Once we have the mix with the right texture, we serve in a bowl, decorate the plate with pieces of egg and ham. We can put the finishing touch with a little extra virgin olive oil.
