Portuguese Rice Pudding (Arroz Doce)

The Ingredients: 600ml water, 1 cinnamon stick, 3g salt, 25g butter, zest of 1 lemon, 180g short grain rice (do not wash), 2l whole milk, 300g sugar, 8 egg yolks and powdered cinnamon.

The Prep: Place the water, cinnamon stick and the zest of the lemon in the pan, add the salt and the butter. When boiling add the rice and with a spoon stir well and let cook over low heat for 15 minutes. When the rice is cooked slowly add the milk, continue stirring with a spoon to avoid sticking to the bottom of the pan. Add the sugar and let it cook until it is creamy, turn off the heat, discard the lemon zest and the cinnamon stick. At the end, slowly add the egg yolks to the mix. Decorate with powdered cinnamon.
