Ingredients: 2 egg whites (organic or free range) and 110g white sugar.
The prep: Whisk the egg whites in the electric mixer until form a stiff peak, start slowly and gradually increment the speed and add the sugar, a tablespoon at a time, whisking well until sugar dissolves. Preheat the oven to 150 °C. Bake for 25 minutes with fan off. Let it cool in the oven for at least 1 hour. If you want some coloured meringues just add food colorant at your choice. Serve with a hot green tea.
