Codfish (Portuguese Bacalhau a Brás )

Ingredients: 400g salted codfish, 6 eggs, 1 onion, 1 straw potatoes pack, 1 chopped parsley branch, 50g black olives, extra virgin olive oil, salt and pepper to taste.

Preparation

01.Desalt the codfish, put in cold water, change the water several times for 2 days.

02.Cook the codfish (boiled) and drain the water.

03.Crumble the codfish into small pieces and reserve in a bowl.

04. In a large frying pan put a little portion of olive oil and add the sliced fine onion.

05.Remove the oil from the frying pan and leave a little so that the scramble does not stick. Add the codfish, the straw potatoes and the beaten eggs.

06.Remove gently over medium heat for 2 minutes until the mixture is set.

07.Serve on a plate and garnish with the chopped parsley and whole olives.
