Ingredients: 2 slices fresh codfish, 2 large potatoes, 1 onion, 2 cloves of garlic, ½ red pepper, 2dl white wine, 100g peeled and toasted almonds, extra virgin olive oil, salt and chopped parsley to taste.
Preparation:
01.Cut the potatoes into slices, the red pepper into strips, the onion and the garlic into slices.
02.Wash the codfish and add salt.
03.Put oil in a pan to brown the garlic and remove. In the same pan, brown the codfish and remove.
04.Saute the red pepper and onion in the fish oil, add the potatoes, almonds and wine, cook until it evaporates, season with salt.
05.Heat the oven to 200ºC and when it is hot place the tray with the potatoes and other ingredients for 25 minutes, the fish should only be placed in the last 10 minutes.
06.Serve with parsley and garlic on top.
