Apple Tacos

Ingredients: 1 pack of gluten-free corn tortillas, 1 golden apple, ½ spring onion, ½ lime, coriander, extra virgin olive oil, 1kg roast pork loin and guacamole.

Preparation:

01.Cut the apple into cubes ½ cm in size.

02.Heat the olive oil in a frying pan and place the apple cubes. Leave on medium/high heat until the apple acquires a golden color.

03.Add the very thin chopped spring onion and let it cook for 5 minutes.

04.Turn off the heat and add the chopped coriander and lime juice. Remove well to join all the flavours.

05.In another frying pan heat the tortillas one by one, letting them heat approximately 2 minutes on each side.

06.Assemble the tacos using the heated tortillas and the meat with the apple. Put some guacamole on each taco and serve with additional lime to season.
