Andalusian Remojón

The Ingredients: 250g salted cod, 2 oranges, 1/4 onion, 50g black olives, 2 eggs, extra virgin olive oil, salt and balsamic vinegar of Modena to taste.

The Prep: Soak the cod in fresh cold water during 24 hours. Drain and cook the cod in boiling water for 20 minutes. Cool and shred the cod into chips. Boil the eggs, peel them and cut into quarters. Peel the oranges and cut into slices. Cut the onion into slices. Take the bone of the olives. Prepare the salad by placing the ingredients on a platter: orange, onion, cod, olives and eggs. Dressing the salad with salt, balsamic vinegar and olive oil.
