Ingredients: 300g of carrots, 2 minced garlic cloves, 1 tablespoon of sweet paprika, 1 teaspoon of fennel, 1 tablespoon of chopped parsley, 2 tablespoons of vinegar, 2 tablespoons of extra virgin olive oil, salt and pepper to taste.
Preparation:
01.Peel the carrots and cook with salt. Remove when they are still stiff and go through cold water.
02.Let the carrots cool in a bowl and cut them into slices.
03.Season the carrots with all the other ingredients and leave the marinade to rest in the refrigerator for 1 day to gain flavor.
04.Serve as a starter with bread.
